This tasty recipe is made with beans or green beans. It is a typical dish of the particular Andalusian cuisine, from the region of Granada. It can be enjoyed in many ways, since you can substitute cured ham by chorizo or morcilla and use some vegetables, such as tomatoes or bell peppers.
The preparation proposed here, emphasizes the simplicity of flavors and the main ingredients: ham with delicious flavors, not too fatty and fresh beans.
Ingredients for 4 servings:
- 600 gr. of broad beans
- 100 gr. Jamón de Cebo
- onions
- 1 carrot
- 1 leek
- 1 clove garlic
- bone or animal fat
- olive oil
- salt
- water
Elaboration
In a saucepan, prepare a stock. The stock containing: chopped vegetables (an onion, a carrot, a leek and garlic clove for example) and animal fat (bacon, chicken thigh, a bone pork, etc.). While the stock starts to boil, you can separate the beans and peel off the second skin. The following, when the stock has boiled for twenty minutes, remove from the heat.
Heat some olive oil in a pan and then sauté a cut onion into thin slices and ham into small pieces. Add the beans and finally, pour the stock to coat. Simmer for fifteen minutes watching until the beans are ready.
