Raised in ideal conditions by Armando and Lola at their organic finca in Montefrío, these 100% Iberian pigs produce a highly refined organic charcuterie. The palette (shoulder), which is sold here already sliced, is of extraordinary quality, a perfect harmony of lean meat and fat, with intense bellota (acorn) flavors.
In addition to the “ecológico” label they enjoy, these Pata Negra are labeled Denominación de Jabugo, and have been wearing the black ring (100% Iberico de bellota) of Spain's Iberian pork classification since 2014.
