Each year, special care are given to the best Iberian pigs. The Summum palettes are derived from this selection. The label is attributed only to a limited number of pieces and in the label of these pallets must appear the SUMMUM mention. Curing time is generally longer than the acorn palette. Cured Shoulder ham in slices, pure iberian porks from Los Pedroches (Cordoba, Spain) - pata negra pig breed, La Finojosa house. (100 gr.) Cured for 20-24 months in the cellar at Hinojosa del Duque (Córdoba).
Iberian morcón is made with Iberian acorn-fed pork in a similar way to chorizo. It is a thick sausage made from a careful selection of chopped and minced meat.
